Cherry and Rice Stuffed Pumpkin

What You Need:

1 (4 lb.) pumpkin

3 qt. water

1/4 tsp. salt

1 1/2 C long grain rice

2 tart apples, cored, peeled and diced

1/2 C dried cherries

1 stick unsalted butter, melted

1 TBSP sugar

3/4 tsp. Cinnamon

This soup is a decadent comfort food!  This rich soup is perfect after a cold, long day.  Serve it in a bread bowl for even greater indulgence. Garlic steamed veggies on the side nicely round out the meal.  You could reduce the liquids and make fondue as well.
